A Glorious Day for a Ride

Yesterday was cold, wet, and windy. Today was glorious. The air was clean and fresh, the sun was warm, and the breeze was gentle. It was perfect weather for an afternoon ride. Overall, this was a pretty good weekend!

I enjoyed a rare trip to the Davis Farmer’s Market.

I had a craving for lamb, so I picked up a nice piece at my local Costco. I marinated it in some coffee, herbs, red wine, and balsamic vinegar. I cooked a bit of it last night and served it with spinach fettuccine, a rustic charred heirloom tomato sauce, and wild mushrooms.

The photo does not even begin to do this dish justice. If I may say so myself, it truly was at least as good as any dish I’ve had in any restaurant.

The rest of the lamb marinated overnight and is now in a pot of Irish Lamb Stew made with Stout and Coffee. It smells delicious. I’ll be serving it shortly on a bed of Colcannon (simply smashed Yukon Gold potatoes with some baby kale mixed in). Photos to follow.

Good Morning and Happy Friday. Are you looking forward to the weekend as much as I am? It’s looking like Saturday in the Davis area will be great for cycling, but Sunday’s weather, not so much. Winds are predicted to be in the 23-mph range. Yikes! No, thank  you. 

I am especially looking forward to cycling this weekend as I have not been on my bike for about 2 weeks and that is simply too long.

Happy Thanksgiving Eve!

It’s really hard to believe that Thanksgiving is tomorrow. I’m cooking for family. It will be a pretty basic and healthy menu: Pork tenderloin. Asparagus. Green beans with mushrooms (no, not the ooey gooey casserole with canned mushroom soup and canned crunchy onions on top, but my healthy “stir-steamed” version). Roasted yams. Mom’s coleslaw. Mom is making pumpkin pie, so no dessert for me. That’s fine – I won’t have worked hard enough to earn it, so … dessert will have to wait for the weekend.

I’ll also cook something for dinner tonight and I’m thinking my seafood stew will be a hit. I’m just realizing that I have yet to post that recipe. It is a simplified version of this cioppino recipe. One of these days I will post that recipe.

I am really sad that I won’t be able to ride tomorrow. It will be the first Thanksgiving in 10 years that I have not cycled in the morning. Hopefully I will be able to make up for it over the weekend!

This would have been a lovely morning for a ride, but there’s not enough time before work to get the kind of ride in I really want. It would be waaay too tempting to just keep riding past the turn around point, you know? So, it’s a brisk morning walk instead.

Now it’s time for a hot cup of freshly brewed, locally roasted Pepper Peddler coffee and a warmed up Apple Yogurt Muffin. Oh, yeah, and work work work.

To warm the muffin, you can pop it in the microwave for about 20-30 seconds, or wrap it in foil and heat it in a 350 degree oven until it’s warmed to your liking.

It’s Still Raining!

We have been so parched for so long, this rain is a very welcome relief!

It’s time to rejoin a gym or something, though, because the days of pre-work or post-work rides are gone for a few months. But this morning I think I’ll just enjoy a nice hot cup of coffee.

Welcoming the much, much needed rain!

The rain is almost here!

I made it home just in time to enjoy the sweet, gentle rain from inside. Although, when properly attired, I do enjoy cycling in a gentle rain. It’s refreshing!

This weather has me wanting to make a spicy seafood stew and some homemade bread. Mmm … doesn’t that sound good? I’ve got the base for the stew started and some focaccia dough rising.

The stew is a simplified version of this cioppino recipe.

What happened to September?

The past few months have been a time for transition and adjustment. In spite of all of it, I am still getting some good cycling in, although it never seems to be enough. Foxy’s Fall Century was last weekend and it was AWESOME. We even got rained on!

Daylight hours are getting too short too fast, so after work rides are pretty much out now, but I’ve been loading up with lights and heading out in the morning a few days a week.

Only time for a quick blog tonight, but hopefully I’ll be able to get back to it soon. Happy cycling!

Fall Quarter Already?!

I can say conclusively that I did not get enough cycling in this summer. But, I did get a really nice short ride in Friday morning before work …

I rode twice on Saturday … an early morning ride and a later afternoon ride … for a total of about 30 or so miles …

And Sunday I got to ride with a couple of girlfriends out to Winters and back, then I took on another loop around Davis solo for a total of 62 miles …

Oat Fruit Bar was good but my favorite is still the Oat Cake!

Yogurt, Bananas, & Candied Pecans (oh, so so sweet), but gluten free (sans the granola, of course!)

I sure love this bike!

I do have to get some serious training in because I’ve got to get ready for the Foxy’s Fall Century in less than 3 weeks.
