My friend and I rode our bikes to Sacramento this morning to watch the final flyover of the Shuttle Endeavor. Most of our photos didn’t come out very well, but this is a screen shot of a video my friend took.  A man and his daughter were waving flags as we were shooting video.

I just thought that this captured a special moment in history.

Buttermilk Banana Berry Smoothie

I just had a very pleasant quick post-work jaunt and am now enjoying a yummy smoothie.

Buttermilk Banana Berry Smoothie
2 servings 

1 ripe banana
1/2 cup each frozen blueberries and raspberries
1 scoop vanilla whey protein
3/4 cup low fat buttermilk
a little agave syrup or honey to taste (optional)
a few ice cubes

Place all ingredients in a blender, cover, and blend until smooth.

Share with a friend and enjoy!

2013 Tour de Cure … Let the Training Rides Begin!

I officially started training for my 2013 Tour de Cure with a 78-mile ride today … Davis to Winters to Vacaville to Dixon and back to Davis.

We stopped to have lunch at the Nugget Market in Vacaville. If you’re looking for something super refreshing, healthy, and easy on the stomach, try fresh squeezed pineapple juice. It’s loaded with an enzyme called bromelain. Just make sure it’s fresh squeezed and not canned or from concentrate. You can order it at the juice bar. A large (I think 16 ounces) was $5.00 and worth every penny of it.

Smoked Salmon Wrap

Feels decadent, but it's actually pretty light

These are very easy to make. Start with Trader Joe’s Clay Oven Baked Whole Wheat Lavash Bread. Spread some light cream cheese (the whipped one works best) on the bread, then layer about 4-5 ounces of smoked salmon on top. Sprinkle with fresh herbs – I used chives and Italian parsley. Roll it up. Wrap tightly in plastic and refrigerate at least a few hours or overnight. Just before serving, unwrap, then slice into about 3/4-inch thick slices. Enjoy with a nice glass of white wine.

I will definitely make these again, but next time I think I’ll use less salmon. In fact, I think I’ll make a mixture of light cream cheese and smoked salmon, and pulse it in a food processor to make a somewhat smooth spread. I think that will give the salmon flavor, but will lighten it up even more. That will be more cost-effective, too.

Got a late start today, but just got back from a nice, quick jaunt to Winters and back. No pictures, just cycling.  A quick stop at Putah Creek Cafe in Winters for ice water (thank you!!!)

Cooling off with a refreshing buttermilk and banana smoothie with whey protein, then freshen up and go to Nugget to buy some treats for Labor Day dinner.
